    @chloestein Friendship offering: The Raspberry Cake (I’m too new to know where to post it yet)
    2c whole wheat Flour
    1t. baking soda
    1c. Date sugar
    1c. Applesauce
    4 ripe bananas
    1T vanilla
    1 12oz pkg. frozen raspberries, thawed
    1-2t. ground allspice
    1/2-1t. cinnamon
    Frosting:
    2 2/3c. cashews (I like to do about half of these with raw pistachios)
    1 3/4c. almond milk
    1/3c. dates
    1T. vanilla
    Topping: 1/2-1c. shredded coconut
    2c. strawberries, sliced or chopped
    1c. Fresh raspberries (or black berries)
    Preheat oven to 350 degrees F. Combine flour and baking soda. Set aside. Beat together the date sugar, apple sauce, bananas, and vanilla. Incorporate dry ingredients. Fold in thawed, frozen raspberries. Spread in 9×13 glass baking pan evenly. Bake 40-45 minutes until set. Make the frosting in a high-powered blender. After cake has cooled, slather cake in frosting and top with alternating, diagonal stripes of fresh strawberries and raspberries. Add coconut like sprinkles.

      • You are going to love it! The presentation is a show-stopper, with crazy green frosting and all those berries and coconut sprinkles, and it tastes amazing. I like to go heavy on the spices–so heavenly!!
