Another cold bean + vegetable salad... this time with 3 fruits! 🙂
This dish is perfect to have a cup or a few all by itself or [even better] over a bed of greens to make a large, gourmet salad. I love this salad topped with a dollop of Nutritarian Sour Cream.
Store extras in an air tight container in the fridge and enjoy with in the next 4-5 days.

2 cups chopped red/purple cabbage
2 cups chopped cucumbers
1 medium zucchini, spiralized or chopped
1 cup broccoli slaw
1 cup chopped sugar snap peas
1 cup chopped grape tomatoes
½ cup finely chopped sweet onion
1 apple, chopped
½ fresh mango, chopped
1 fresh plum, chopped
1 cup cooked chickpeas [oven-toasted/dehydrated for a crunch]
1 lemon, squeeze juices
2 - 3 tablespoons red wine vinegar
2 - 3 teaspoons salt-free seasoning blend [I used an original/table blend]
