Cashew Apple Dressing with Fresh Parsley

 1 apple, cored [we like Fuji or Pink Lady]
 12 whole raw cashews
 2 tbsp tablespoons white wine vinegar [or red wine vinegar]
 1 slice of sweet yellow onion [or 2 slices of shallots]
 2 cloves garlic
 3 sprigs fresh parsley [or 1 teaspoon dried parsley]
 ½ cup water [more if needed to reach desired consistency]

Combine all ingredients in a Ninja, Vitamix, or other high powered blender.

Blend until creamy.

Store extras in an air tight container in the fridge for up to 5-7 days.
