Cauliflower + Mushroom Taco “Meat”

There are so many options for a taco-style "meat" or filling... and this is among the easiest and cheapest to prepare! Another popular ingredient is brown lentils, so you can definitely use those in place of the chickpeas!

Another option for the liquid aminos is tamari, coconut aminos, vegetable broth, or simply just water.

 ½ head cauliflower, chopped into small pieces
 1 cup cooked chickpeas [or cooked brown lentils]
 6 - 8 mushrooms [shiitake, baby bella, white button]
 ¼ of one red onion, chopped
 1 - 2 teaspoons liquid aminos or tamari [low sodium soy sauce]
 1 tbsp plus 1 tsp taco/Mexican salt-free seasoning blend
 ½ tsp garlic powder
 ½ tsp cumin
 ¼ tsp smoked paprika
 water as needed as it cooks

Combine all ingredients in a skillet

Cook on medium heat, stirring frequently and adding water as needed so it doesn't stick.

When the cauliflower is fully cooked to your liking, the dish is done!
