Chickpea Waldorf Salad

Base
 1 can Chickpeas [low or no added sodium]
 ¼ cup Walnuts
 ½ cup Blueberries
 ½ cup Celery, chopped
 1 cup Apple, chopped
 ¼ cup Red Onion, chopped
 2 tbsp Raisins or Goji Berries [optional]
 2 tbsp Green Onion, chopped to garnish
Dressing
 ¾ cup Nutritarian Mayo/Sour Cream
 2 tbsp Lemon Juice

In a large bowl, add all base ingredients.

Mix in dressing ingredients and combine well. Nomz!

Serve over a giant plate of leafy greens, in lettuce boats, or eat as is!
