I LOVE cold bean and veggie salads. The greatest part is that you can adjust the amount of ingredients to suite your taste. For me, I love balsamic, so I may add more. You can do this for any ingredient in this recipe and it will still be delicious!

3 cups cooked chickpeas
1 ½ cups chopped tomatoes [I love cherry or grape]
¾ cup chopped, cooked sweet potato
1 small sweet onion, chopped [or other variety]
3 cloves garlic, chopped [or a small handful or garlic scapes or chives, chopped]
1 cup raw broccoli slaw or finely chopped broccoli
1 green pepper, chopped
1 medium zucchini, chopped
1 medium cucumber, chopped
½ avocado, cubed
2 tbsp balsamic vinegar
2 tbsp white vinegar
2 tbsp fresh lemon juice
1 dash black pepper

Combine all ingredients.

Stir.

Note: Even better chilled in the fridge to let it marinate with the vinegar and juices.

I got the ingredients today but wondering how you cook the sweet potato. I’m also making the sweet balsamic hummus, should I cook them the same way?
You can either boil, steam, or bake… whatever you prefer! I typically bake in wedges, that way I can use them in salads or hummus or other dishes.

WOW!!! Bethany, this recipe.. I am back in full force now and sticking my big toe in the water by looking at recipe ideas. I can’t believe the last time I logged on and shared my very private struggle at step 1 in the forum I was breaking down about seeing 3 ingredients on my counter and knowing it’s true food but feeling clueless about what to do with them. Those exact (3) ingredients are right here!!! I had a can of chickpeas and could have made something similar to get by on. Looking back, that’s how we learn that there’s always a way. But thanks you fir posting this..I’m sure now I’ll make it one day & “remember when”… 🙂
