Creamed Cucumber Salad

So crisp and refreshing.

This salad dish is a great addition to a gourmet salad, on top of a baked sweet potato [my fave!], over a deconstructed bean burger or veggie burger, or simply on its own as a side dish.

YASSS, girl.

Since we almost always have Nutritarian Sour Cream/Mayo prepped in the fridge, this recipe is a quick hitter!

Salad Base:
 4 medium cucumbers, thinly sliced [more if desired]
  cup thinly sliced sweet onions
  cup thinly sliced red onions
For the cream, combine the following in a Nutribullet or other high powered blender or food processor"
 ½ cup Nutritarian Sour Cream [link above or in recipe section]
 4 tbsp white vinegar
 ½ tsp onion powder
 1 tsp dried dill
 ½ tsp black pepper
 1 - 2 cloves of garlic [or 1/4 teaspoon garlic powder]
 2 pitted medjool dates [or 4 deglet noor dates]
Top With:
 green onions/scallions or chives, optional
 freshly minced parsley, optional

Combine sliced veggies with cream; stir.

Chill in fridge.
