Kale & Berry Salad with an Orange Sunshine Dressing

This bright, fresh salad is incredibly energizing & super easy!
It is also extremely versatile. You can use any combination of ingredients to create the base of this salad!

*Note: The dressing does not have a nut/seed base, so make sure you have a few in the salad to maximize absorption as there are fat soluble nutrients in greens.

Dressing
 Juice of 3 Oranges
 2 Medjool Dates
 1 tsp Vinegar of choice (I used pomegranate, but white or apple cider would work)
Salad
 6 cups Curly Kale (or greens of choice)
 2 cups sliced Purple Cabbage
 2 cups Berries of choice (pictured here are blueberries, sliced strawberries, and blackberries)
 1 handful Nuts or Seeds of choice (I used Sunflower Seeds)
 1 cup Kidney Beans (added after the photograph)

Blend dressing ingredients together in a high speed blender until smooth.
*If you have date paste on hand, use 1 1/2 tbsp date paste instead of dates and simply mix all ingredients together in a small bowl

Wash and chop kale. Put in a large bowl.

Pour dressing over kale and deeply massage into the kale. Massage all kale until it turns a bright green.

Add cabbage and toss. Top with berries, sunflower seeds, and beans. Violà!
