Loaded Sweet Potatoes

 1 baked Sweet Potato
 ½ cup Chickpeas (or Toasty Chickpeas)
 ¼ cup Nutritarian sour Cream, Garlicy Dressing, or Classic Hummus thinned with water
 1 small Tomato
 1 tbsp chopped Parsley
 2 tbsp finely chopped Greens or Microgreens (optional)

Heat your oven to 375F. Wash your sweet potatoes and cut them in half length-wise. Line a baking sheet with parchment paper. Place them face down on the parchment paper. Bake for 40 - 45 minutes or until you can pierce it easily with a fork. Allow to cool enough to handle.

Slice your warm baked baked sweet potato in half and top with chickpeas, tomato, chopped greens, herbs, and pour dressing of choice on top!

Garlicky Dressing
