Multi-Seed Salad with Avocado, Lime, and Grapes

This is one of Mr. Love Chard's amazing creations and is one of my favorite salads to date! It's sweet, crunchy, and has a little kick with the mustard and vinegar. It's a frequent salad in our rotation for sure.

It's a little heavy on the nuts and seeds for one dish, so keep that in mind if you're in weight loss mode. [Just reduce the amounts.]

Remember, you can always alter the amounts of the ingredients. Love avocado and Nutritarian Parmesan Cheese? Add more. Don't care for raisins? Leave them off. 🙂

 3 oz kale, chopped [or 2 large handfuls of baby kale]
 ¼ of one avocado
 ¼ lime [squeeze the juices]
 3 oz spinach [2 large handfuls], chopped
 2 oz baby swiss chard [1 handful], chopped
 ¼ cup chopped sweet onion
 1 small tomato, chopped
 ½ small - medium cucumber, chopped
 ¼ cup chopped banana pepper or bell pepper [any color]
 1 tsp Nutritarian "Parmesan Cheese" [in recipe section]
 3 whole walnuts, broken into pieces
 5 whole cashews, broken into pieces
 1 tsp sunflower seeds
 1 tsp chia seeds
 1 tsp hemp seeds
 6 raisins
 10 grapes, quatered
 1 tbsp fresh pomegranate arils
 1 tsp spicy brown mustard
 splash of red wine vinegar [or white wine or white vinegar]

Massage the kale with avocado and lime juice until evenly coated.

Add remaining ingredients and enjoy!
