Rodeo Bean Salad

Doesn't get easier than throwing plants in a bowl, baby. Cold bean and veggie dishes are at the top of my list for quick, sustainable, and delicious. 

Feel free to switch up the spices and ingredients to your liking. The bowl is your canvas!

 2 cups cooked black beans
 3 medium tomatoes
 ½ of one yellow sweet onion, chopped
 1 green bell pepper, chopped
 1 orange or yellow bell pepper [or a few mini sweet peppers], chopped
 4 cloves garlic, minced
 2 green onions, chopped
 5 - 8 sprigs cilantro, finely chopped
 1 tbsp red wine vinegar [or white wine, white, apple cider]
 1 tbsp cumin
 1 ½ tsp chili powder [or hatch chili, ancho chili, etc.]
 ¼ tsp smoked paprika
 1 dash black pepper

Combine, stir, chill. Boom.
