Spiralized Pad Thai

 4 medium Zucchini
 5 large Carrots
 2 cups Broccoli, chopped
 1 ½ cups Edamame [about one 12 oz frozen bag] or Chickpeas
 1 tsp unhulled Sesame Seeds
 ½ cup Almond Ginger Dressing [link below]
 2 tbsp chopped Cilantro [optional]

1. Heat edamame according to instructions. Set aside.
2. Using a spiralizer, cut the zucchini and carrots into spirals.
3. In a large bowl, toss all ingredients and mix well. Store in the fridge in an airtight container or portion out for several meals. This tastes best after it has been marinating for a few hours or more!

*Note: If you do not have a spiralizer, you can buy pre-spiralized veggies. Trader Joe's, Whole Foods, and many other grocers carry them. If this is not available, you may julienne [thinly slice the zucchini and then cut into thin strips] and simply chop/shred the carrots.

Almond Ginger Sauce & Zesty Orange Sauce
