Sun dried tomatoes will always have my heart <3 After spending time in Italy, I came back with three giant bags of sun dried tomatoes. I couldn't wait to start creating with these babies!
This spread can be used on sandwiches, wraps, lettuce boats, as a veggie dip, as the cream in a soup, or thinned out [with a touch of water] as a salad dressing 🙂
½ cup Sun Dried Tomatoes [dried, not packed in oil]
½ cup Cashews
1 cup Water
2 ½ tbsp Lime Juice [or to taste]
2 tbsp Nutritional Yeast
1 tbsp Onion Powder
½ tsp Braggs Liquid Aminos

In a small bowl, cover Sun Dried tomatoes and cashews in water and allow to soak for 30 minutes. Drain and place all ingredients in a blender. Blend until super smooth and creamy!
