Sweet Balsamic Hummus

We LOVE balsamic... just about as much as easy to make hummus recipes! This Sweet Balsamic Hummus is the best of both worlds. 

This hummus pairs nicely with oven baked tortilla chips, chopped vegetables [carrots, cauliflower, pepper, cucumber, etc.], or thinned out with some water for a dressing in salads.

 1.50 cups cooked chickpeas
 1 cup cooked sweet potatoes [packed tightly in cup]
 2 tbsp balsamic vinegar [add more to taste]
 2 tbsp water [more if needed to blend]
 ¼ tbsp juice from a fresh lemon
 ¼ tsp sesame seeds as a topper

Pour lemon juice, balsamic, and water into high powered blender. [I find it works best to add the liquid and spices to the blender first so it blends well]

Add chickpeas and sweet potatoes.

Blend until desired texture.

Scoop out and top with sprinkled sesame seeds for show... and for health. 😉
