Honestly... one of my favorite dishes, especially in the winter. Warm, comforting, and LOADED with vegetables.
Love it topped with salsa, Nutritarian Sour Cream, and avocado.

In a large bowl, break apart the brick of tofu with your hands until it crumbles nicely.
Add spices + seasonings and mix well. Set aside to let the tofu absorb all the flavors.
Chop all vegetables and sauté with water or vegetable broth on medium heat until half way tender.
Add scramble mix to the pan, mix well, and cover.
Cook until vegetables are your desired texture.
