Tofu Scramble

Tofu + Spices + Seasonings
 1 package firm or extra firm organic tofu
 2 tbsp nutritional yeast
 1 tsp dried parsley
 1 tsp coconut aminos
 1 tsp liquid aminos
 1 tsp turmeric
 1 tsp salt-free seasoning blend
 ½ tsp garlic powder
 ½ tsp onion powder
 ¼ tsp kelp powder
 ¼ tsp black pepper
 ¼ tsp ground coriander
 1 dash chipotle powder
 1 dash white pepper
 1 tsp miso paste, optional
Vegetables
 mushrooms of choice, chopped
 your favorite onions or frozen leeks, chopped
 frozen peas
 spinach
 broccoli, chopped or broccoli slaw
 zucchini, chopped
 carrots, shredded
 whatever other veggies you like!

In a large bowl, break apart the brick of tofu with your hands until it crumbles nicely.

Add spices + seasonings and mix well. Set aside to let the tofu absorb all the flavors.

Chop all vegetables and sauté with water or vegetable broth on medium heat until half way tender.

Add scramble mix to the pan, mix well, and cover.

Cook until vegetables are your desired texture.
