This Tomato Cucumber Salata can be eaten by itself, on top of salads, in Buddha Bowls, in Falafel Pitas, really the sky is the limit 🙂
5 cups diced Cucumbers
4 cups diced Tomatoes
2 tbsp chopped Mint
2 cups chopped Parsley
6 oz chopped Arugula
1 ½ cups chopped Red Onion
3 tbsp Lemon Juice
1 ½ tbsp White Vinegar

Add all ingredients into a large bowl and toss it like you mean it!
Allow to marinate in the fridge for at least 1 hour to absorb all of the flavors!!

Makes a giant bowl! If you want less, half the recipe!
