Zucchini Salad with Dijon and Dates

I feel like I say this all the time but THIS IS SO REFRESHING! We love to enjoy this over a bed of romaine, mixed greens, spinach, or a combo.

 3 to 4 medium zucchinis, spiralized
 1 shallot, thinly sliced [or sweet yellow onion]
 10 grape tomatoes, quartered
Dressing
 1 tbsp dijon mustard
 1 tbsp stone ground brown mustard
 1 tbsp tahini [ground sesame seed paste]
 ½ cup water
 1 tbsp raw apple cider vinegar
 1 tbsp fresh lemon juice
 1 tsp coconut aminos
 2 pitted medjool dates [or 4 deglet noor dates]
 ¼ cup cooked red lentils [or chickpeas or white beans]
 ¼ tsp ground black pepper
 1 slice from shallot
 1 small handful spiralized zucchini
 1 tbsp jalapeno juice, optional
